If you can speak to half dozen based, Patriot-run food trucks, I bet they would be on board.
I've ran a food truck for the past 7 years - the split between based and commie douche bag truck owners is about 50-50 where I live but they ALL would jump at the chance for more work as most festivals and events have been cancelled for the past 18 months.

Something tells me that the cities in which these restaurants operate in would have no issue with pulling the permits of the food trucks that did this.

Business licenses are being used politically, and that is why giving the government that sort of ludicrous control was a terrible idea from the beginning.
My city wanted to bring in food trucks for special events at the fair grounds, but the restaurants nearby started whining. So the asshole county made it damn near impossible for a food truck to operate by requiring trucks to get a permit to operate and new permit to be at the location of service (regardless if it was private property) that ran into the hundreds of dollars per day depending on the location, and you had to apply weeks ahead of time, pay fees upfront, and the county would drag ass on approval, with many times approving it at the last second or after the fact, and once approved, you couldn't get the fees back. The city sued the county over it, and it's working it way through the courts.
Before this mess, you only needed a food permit for the truck to operate anywhere in the county.
Oh, our county and city doesn't not get along. At all. Much worst now that a Trumper got in the mayor office. Now all they do is fight. It's so bad that the county commissioner, who some how won her seat even through everyone in the county hates her and knows she's dirty as hell, and is trying to get her son installed as mayor.
She cheated; it's that simple.
Depending on your state's constitution, said city may have rights superseding the county's regarding that.

That's not entirely true. In some states, Cities and Counties can both supercede conflicting state laws in regards to their local affairs through the means of home rule charters so long as they still otherwise adhere to that state's constitution, similarly to how states' laws are beholden to the federal constitution.
I would almost guarantee that every city that is pushing these mandates have very strict rules on when and where trucks can legally park - some even restrict the trucks from setting up on private property to protect brick and mortar restaurants from the competition of food trucks (they pay more taxes) - a common way they restrict food trucks is by making them have a restroom accessible to them, usually within 200 feet and it has to be a written agreement.

There's one that actually popped up in my city, parked inside a big utility store's parking lot downtown right next to a main boulevard, and there's both a pizzeria and fast food restaurant within probably a 100 yards with no drive-throughs. A few more restaurants within a quarter mile. No idea if they're opened yet tho.
Vax passport was supposed to start but Idk if it's still actually happening or if it was a bluff or something to get more people vaxxed. I go out in restaurants a LOT and haven't seen any signs on their doors or windows yet about this upcoming new requirement, as opposed to when the mandatory mask started last summer.

This is alresdy the case in NYC. Lower manhattan yesterday there were 4 not far from WTC. Lines were insane.

This is actually really smart. I know there are a lot of laws around food trucks though, permits of where they can park and such.

But if you name your truck peace,love and tacos and paint it like a flower child I will not be patronizing. Thats what the one most visible food truck in my area is called.
