I am vegetarian and my mother is vegan. She's pretty healthy. I am of the opinion that different people have different tolerance for being vegan and some people can manage on a restricted diet like this, and some people just can't. IMO humans are variable and set up differently to one another metabolically. It probably depends partly on what your ancestors ate.

Former vegan here. Being vegan makes you less sharp, anxious, and it makes it harder for you to process foods. My husband also developed horrible IBS and we both had problems remaining calm and regulating our emotions - probably because we were so nutrient starved. A friend of mine who was always slim became a vegan and last time I saw her, she had put on weight.
It shocked me because she was always very fit and slim.
She did say that it's hard to get enough protein and I think you end up eating more carbs.
