Well if you are at war with China, then their shipping is a valid target. How many of our freighters were sunk by German U-boats in WW2?

Notice to the world - any ship from any country going to any port in China may be sunk, and every cargo ship in an active war zone will be sunk.

If the USA defends Taiwan, that means war with China. This isn't a game like the Vietnam or Korean wars.
