Fresh strawberry! The freshest the strawberries the better! If you can find a really good batch of strawberries, buy a whole bunch, purée them, strain the seeds, and then put the purée in the freezer so you can make several batches.

Yes! The ricotta makes magic in pancakes! Get creative and add ricotta to your favorite pancake...blueberry, strawberry, pecan...you know the thing!

Here you are undine:
Lemon Ricotta Pancakes 🍋
1 1/2 C all purpose flour
1 tbsp baking powder
2 tbsp granulated sugar
1 tsp kosher salt
3/4 C whole milk
1/2 C ricotta
2 large eggs
1 tsp pure vanilla extract
Butter for cooking
Juice & Zest of 1 lemon
Powdered sugar, lemon slices for garnish
Syrup of choice
First- combine all dry ingredients in a large bowl
Second- mix all wet ingredients together, adding 1 egg at a time
Next- combine wet & dry ingredients together with a wooden spoon, fold them together barely mixing. This is key to fluffy pancakes. Don't worry about lumps, simply ensure that all dry ingredients are wet.
Melt butter in large nonstick pan on medium heat. When butter becomes foamy, then turn heat down to medium low and ladle in batter. Cook until bubbles form in batter and flip when bottom is light golden. Do not over cook.
This recipe makes 8 medium size servings. Garnish with powdered sugar & lemon slices. Enjoy!
