Just used the last of the meat, but still have pounds of beautiful fat still perfectly sealed for mixing with a large amount of moose meat, if we can get one soon. If not, we do have an in for a good cow.
I ordered some of the Keystone meat per your recommendation to try out. If we like, I'll stock up. It's not cheap, but shelf stable meat is a great thing to have. Just need to use it - chili, stew, tacos. We've almost completed building a new house and I'll finally have my CNG whole house backup generator. I also plan on putting in solar and a battery wall as backup to the backup at some point. We are in the 'burbs as well, but no HOA where I am building.

No doubt. Thankfully, I’m building in a small 9 home development w no HOA and in a county w lenient agricultural guidelines. Planting an 8 tree orchard and raised bed planters. Full sun finally.
Stock up on meat now and freeze it.
I vacuum seal my meat and get perfectly good meat after a year in the freezer. Not as good as fresh, but def not freezer burned.
Form a mutual assistance group. Neighbors defending neighbors. Get out of the cities. You don't want to be in an urban area for 2023.

You can't stock up enough if they manage this. Only buy from local known organic ranchers.

It's nice having meat that doesn't rely on a freezer, I'm stuck in the suburbs a diesel generator is not really doable.
