Honestly Italian grains process in the body weight different than American grains. Anyone who's traveled overseas knows just how much the chemicals in American soil and rivers affect our bodies. So many people have been to Italy and back and note that they did not gain weight, they did not feel bloated, they did not feel fogbrain even though they ate nothing but pasta the entire time. Same with my family when we just got back from the Philippines, where young members of my family said they ate whatever they wanted and didn't feel bloated nor did they gain any weight.
I began buying Einkorn wheat, which is the ancient original wheat. And despite being "gluten-sensitive", I can eat everything made with Einkorn with zero problems. It is a little trickier to bake with so you have to follow recipes closely, but it tastes fabulous. NO bloating or other problems. I love it.
