From my personal experience, if you cut out sugar pretty much entirely, eat minimal carbs, and give your digestive system atleast 14 hours rest between dinner and breakfast, you will be amazed how quickly your health turns around (not to mention weight loss).
Why this is hidden in plainsight beats me. I watched my wife do this for 6 months before I even started because I was that skeptical. And once I started, it was so easy. The daily fasting really kicks your body off of sugar dependance, reduces insulin, and next thing you know you dont even crave sugar. And if you keep it up, you are actually turned off by the same sweet stuff you always liked.
Honestly Italian grains process in the body weight different than American grains. Anyone who's traveled overseas knows just how much the chemicals in American soil and rivers affect our bodies. So many people have been to Italy and back and note that they did not gain weight, they did not feel bloated, they did not feel fogbrain even though they ate nothing but pasta the entire time. Same with my family when we just got back from the Philippines, where young members of my family said they ate whatever they wanted and didn't feel bloated nor did they gain any weight.
