I ate a very strict paleo diet a few years back, and slimmed down very quickly.
But the lack of carbs began to screw with my hormones, and it also led to extreme hair shedding. So I had to reintroduce carbs back into my diet, and everything slowly came back into balance.
I really wish our food supply wasn’t so ridiculously processed to the point where it’s all pure junk.
Every one of my friends that’s traveled to Europe is so shocked by how much they’re able to eat during their trips - practically living off of bread, cheese, wine - and come back having lost weight.
The meat you were eating possibly wasn't grass fed? Possibly was pumped full of antibiotics.
I think the safest meat here is lamb. Sheep don't eat much apart from weeds and the occasional handful of corn to get them where the farmer wants them. Their milk, too, is unadulterated.
I supplement my diet (meat, eggs, fish) with certain fruits and veg. Also minerals and vitamins. I avoid refined carbs. I'm still working on it to get my "leaky gut" problems sorted.

LDL is 'Low-density lipoprotein.' Lipoprotein is not cholesterol. LDL serves a very necessary function in the body by transporting the body's needed cholesterol from the liver to where it needs to go. It also transports other vital fat-soluble nutrients like vitamin E, and Ubiquinol (CoQ10.) It is not 'bad'.
'HDL is good cholesterol.'
HDL is 'high-density lipoprotein' again not a cholesterol. It serves the necessary function of retrieving excess cholesterol and returning it to the liver. It is no more good or bad than anything else that's supposed to be in our blood.
'Your cholesterol levels are...'
Your cholesterol levels are a calculation based on triglycerides, ldl and hdl. This calculation assumes all ldl and hdl is saturated with cholesterol which is not always the case. Not that it is grossly inaccurate but it's an estimate only.
'You should alter your diet'
Your body is amazing, and since cholesterol is so highly needed if you don't eat enough of it your body knows how to produce its own. Any low cholesterol diets will only have temporary minimal effects.
'You should take a statin.'
Statins prevent the body from making cholesterol which will lower your levels and make doctor happy. The pharm companies are getting about $10k a year for you to be that on for life so they're happy too. Taking it for a long time and starving your body and brain of an essential nutrient for too long leads to the predictable side effects. Muscle pain and damage due to your cells breaking down and not having cholesterol to repair itself. Memory loss and confusion due to the same reasons in your brain.
'Saturated fats are bad.'
Saturated fats are fat molecules that only have single carbon chains. Animal fats (butter, lard, tallow, etc) are saturated and have been vilified by the media and by the doctors, while highly processed unsaturated fats get heart healthy labels.
Like all modern vegetable oils, canola oil goes through the process of caustic refining, bleaching and degumming — all of which involve high temperatures or chemicals of questionable safety. And because canola oil is high in omega-3 fatty acids, which easily become rancid and foul-smelling when subjected to oxygen and high temperatures, it must be deodorized. The standard deodorization process removes a large portion of the omega-3 fatty acids by turning them into trans fatty acids.
Saturated fats in your body cells means they are more flexible and can change shape and move without rupturing. Unsaturated fats have one or more double carbon bond making them less flexible therefore making your cells less flexible.
