I'm pretty sure I emailed the company after reading an article about them on TGP. The prices are pretty crazy. I think $200+/3 lb bag before some discount. With the discount I think it was about $160+/3 lb bag. I guess the freeze drying process is expensive, but I'm surprised there are enough people willing to spend that much to keep this company in business.
Is that because some kind of compression happens during the freeze drying process? I’ve worked in food service for a while but never dealt with freeze dried beef.

One pound of freeze-dried ground beef is equivalent to more than seven pounds of fresh, which makes the price not so totally insane.

Water has weight; it would be removed in the process.
