Yeah, I was thinking old cast iron stoves and backyard clay ovens but not everyone lives in a rural environment. In urban areas many cannot run vent pipes or have mounds of clay in yards they don't have.
Good luck with this venture. It's very difficult to find mass-produced appliances which aren't filled with all sorts of nasty stuff. It's hard enough eliminating cookware, drinkware, utensils and food storage and replacing as much with glass and stainless steel.
Most of the ovens inside should be porcelain over steel, given the temperatures. I get you smoked a control board and the PCB burned emitting that foul smoke/chemical smell. It happens, but the oven part should be pretty PFAS/PFOS/VOC-free.
Simple is better, IMO. My washer and drier used to ask to be on my network. All my appliances are LG now. My range is made by Five Star in Tennessee and is dumb. The UC ice machine and prep kitchen fridge and freezer are commercial and I'm sure Asian origin.

When we got a new range, we hooked it up in our work building in an area with roll up doors and ran the oven and stove top on their highest settings for a few hours several days in a row. Then we cleaned everything with vinegar/water before installing it at home. I'm not sure how you could do this with a wall oven but it worked for us and our birds did just fine :).

I have had to purchase 4 stoves this year. The ones I replaced and the new ones only last A FEW YEARS. The same with other appliances. I had a dryer that was great from the Brady bunch until I messed it up. One of my tenants bought his wife a new dryer and I grabbed the old one. Exactly the same model only a different color.
I would call a service man to see if anything can be done.
We bought a Siemens double oven (electric). I was wanting gas but someone had ordered this and returned it because they could not figure out the controls of how to turn it on or use. It was marked down and the right size so we bought it. I have not had ANY issues with this oven including -outgassing. We have had it ten years, and we found it easy to operate even though the first owner did not put the owners manual back in the box.

At the very least I would run it empty to burn off any initial residues, then clean it real good with vinegar and water solution.

Get a second hand stainless steel commercial oven. No teflon or other coating crap on the inside.
And get rid of the microwave while you are at it.
