Only thing I will say after watching the whole video is in the screenshot where it shows the 192.168.1.100 IP address of the thermostat, this in itself cannot prove it's from china. That IP address is an internal IP address handed out by most common routers. Now if we had the IP address it was communicating with and that was located in china, I would have believed that one more but just by showing the 192.168.1.100 does NOT prove it was communicating with china based on that IP alone.
Think of it as, you have an address on a motel/hotel. This would be what they call a WAN IP - or the outside IP of your connection. The IP they are showing in the video is more akin to the room numbers in a hotel. It is an internal numbering system to reference different devices. Many hotels can have a room 200. However if you have an address 1234 South Street, that will be unique. They showed the room number not the street address of the thermostat.
I do agree that China could have hacked through a thermostat and laterally moved to the VLAN the machines are on if they were on the same router/system, but that screenshot wasn't the proof I was hoping to see. There may be more and maybe that model phones home to a central control in China. For example I have a cloud 3-d printing device, but if I ever use the cloud to 3-d print something, it communicates with servers in China before finally reaching my destination here and many IoT devices are the same.
The first part with the Chinese shipping company envelope caught on a 'news' channel is way more damning to me personally.

They were connected to the internet. Did we all forget about the GA senate hearing where Jovan Pulitzer hacked into the Dominion servers live? This happened.
The only way we are going to know if China was connected is if they pull flow logs from the network and see who hit what from where. But that is only possible if the logs exist, or this traffic was captured in some capacity.
There is scores of evidence that fraud happened, and this is the surface level stuff. Who knows what the white hats have.
I was watching the Georgia hearing as it was happening in OANN (or RSBN) as Jovan Pulitzer was testifying, and taking notes and sharing as it happened.

I believe that it was said during the Georgia hearings that Dominion placed a person within polling places that had internet connection. Perhaps the thermostat was simply allowing these Dominion (contracted) people to have internet service.
This was different that the phone Dominion people who remotely fixed things (of course through internet connection).
It was described to be Dominion people sitting helping with voters and their....well I can't recall WHAT they said they were there for. But at a table or sitting alone with their laptop.

I wonder if Dominion had interviews for temporary workers during the election, and they went something like this: "Have you been disgusted with the Trump Presidency?" if yes, then, "Would you like to help get Joe Biden elected?", if yes, then, "Do you believe it is in the nation's interest to have Joe Biden become President?", if yes then, "Would you be willing to help Joe Biden get elected, even if it would involve doing things outside the normal sphere of elections?", etc., etc., before they decide if this person can be counted on to do illegal things to get Joe Biden elected, because they are doing it, "for the good of the country".
Before computers, good old blueprints were regarded as any companies top secrets. They could be stolen but duplicating them was difficult. The only public shops offering the service, were required to call the firm on the print first for permission to duplicate it.
Now 3-D files contain far more accurate data about any companies latest thinking. I have little sense these files are well protected in the cloud. One big firm we avoid gives two instant quotes. One from China and one from the US, at about twice the price. It seems a natural area for greater net security to develop over time as the biggest firms are in the same pickle.
I'm guessing the UV lights have been about fold marks and mail reading machinery roller tracks. Not folded or never in a mail sorting machine would be easy rejects.
