I thought the same thing. Maybe she was talking metaphorically. That's a pretty odd way to say you are being overworked. Especially seeing how the sentence before she was addressing her inability to have control over her body.

Update: Okay so Patriot11Retiree suggested that she really said vials, not gallons as the transcript suggests.

This makes more sense combined with what 7ate9 pointed out below. They were probably testing her blood to make sure she was on her meds.

Blood is drawn in units. Hard to say qhat they were doing with it, but normally they are just taking plasma when you donate blood. Your body holds about 8 units of blood depending on size. A unit is about one liter or 1/4 gallon
