I know there have been a few discords out there that have been shut down..
But how about those old school chat rooms from back in the day? Any of those floating around?

It's a fun "wild west" chat app from internet 1.0. It's still going strong with many internal communities that have been around since the inception of the app.
What server do I join? How do I join a random chat? Default seems to be Libera and doesn't work
They have a security topic available for digest:
mIRC and SSL
There are too many features to list and admittedly I haven't joined an mIRC chatroom since 2005! LOL
However, if you download and install the app, you get a full readme. The app isn't fancy and looks like it jumped straight outta Windows XP, but it's a good way to connect with people and start servers.

Although as pointed out below, Discord is also an option that is viable.
I have to pay for a $20 user license :(
How about Element? It is like a privacy-friendly version of Discord.
Element | Secure collaboration and messaging

Element is a Matrix-based end-to-end encrypted messenger and secure collaboration app. It's decentralised for digital sovereign self-hosting, or through a hosting service such as Element Matrix Services. Element operates on the open Matrix network to provide interoperability and easy connections.
I haven't heard anything bad about Matrix or Element. Should be solid.
This thread from 2003 is a good summation of this :)
