I was already taking Apple cider vinegar, so making a tonic just adds to it, we've been doing it together as a date for two years now.

I couldn't say about acid reflux, I was using apple cider viniger mainly for BP and circulation, adding some other goodies made sense, and i do enjoy the simulation(fire).
Have you tried Kombucha? You can make it with a bottle from the grocery store and sweet-tea brewed up in a jar and covered with a clean cloth. Lots of videos out there on how to make it. Has similar acidic taste to ACV but can be naturally carbonated and has probiotic benefits.
I eat homemade dumplings often thanks to my MIL and they use apple cider vinegar and soy sauce mix with chopped garlic to dip the dumplings in. Makes the apple cider vinegar taste amazing.
A temperature of 117 or above will kill the good bacteria. We eat our fermented veggies or juice cold. We take a shot of fermented ginger/beets juice daily.
I use to do homemade kombucha made with a 50/50 split with black and green tea and putting fresh fruits and vegetables made it amazing. Can't find that stuff for sale, especially bottled strawberry kombucha.
