Unfortunately, Western soy beans are grown via GMO monocultures, using Roundup for weed control. They are poison.
The crops are genetically modified to grow in soil soaked in glyphosate. Glyphosate is used to kill everything in the soil prior to planting. The GMO crops are planted immediately after while they are the only think able to grow. Subsequent applications of glyphosate are sprayed on the crops as the season goes as other weeds spring up. The weeds are killed but not the GMO crops. The plants, however, still soak up the chemicals and we eat them.
If it kills everything in the soil, does it also kill any good bacteria, causing the GMO fruit and vegetables we eat to be empty calories?
I believe it kills primarily plant life, but everything is interconnected in the circle of life: plants, fungi, and microbes, so one way or another, it's hurting the target plant while causing farmers' dependency on commercial fertilizers. The fact that one single crop is grown year after year in this unnatural way, depletes the soil of minerals and that leads to foods that are less nutritious.
Anything grown yourself or in trusted local/smaller organic-minded farms. That’s it.

The modern soy processing doesn't ferment it, I'm not sure what they do to it to make it "safe". Traditionally it HAD to be fermented, otherwise its toxic.
Unfermented soy is also way more oestrogenic than fermented IIRC.
Natto by it's nature is super fermented, but as TCP touched on, I think over 90% of soy, at least in America but maybe China too, is GMO.
Roundup is used practically everywhere on a farm. From keeping the weeds away from buildings. to keeping the weeds away from the crops in the fields. It is primarily the one product that makes the fields of crops clean from volunteer weeds coming up. The Seed companies have Round Up resistant GMO seeds for many different crops including Soy Beans, Beets, Alfalfa, etc.
Western roundup use is throughout the growing season and at harvest. Seeds are roundup ready so they can crop dust or spray to kill weeds then you are correct that grains are sprayed with roundup at harvest to dessicate it more easily.. all summer I have crop dusters flying over my house poisoning us all.
