You don't say which browser you are using but a similar thing happened to me using Yandex (which is a variant of Chrome) on Android. For an unknown reason the browser's handling of installed extensions (for example ad blocker) is weird and the extensions turn themselves on or off without me doing anything.
I found a Chinese extension installed named "Care Your Eyes" which is supposed to reduce brightness or something to avoid eyestrain. No idea how it got there I think it came pre-installed with the browser. Anyway it turned itself on and GAW looked a pinky pastel-coloured mess just like your screenshot. Everything was fixed when I turned it off.
This is exactly what happened using Brave. I didn’t think to go back in and look at browser setting that were manipulated in the update. I was about to get so mad at GAW for changing the format 😂🤷♀️😅
I did update too yesterday but still have original (dark mode) settings. Pink is not bad but my eyes would start tearing having to look at that color scheme too long. I use Brave for browsing this site.
I’m not against pink - but I prefer to run in dark mode to save battery life. I didn’t change any settings, and verified that my setting for GAW was still “dark”. What’s up with this?
I don’t know how to fix your problem, but if would like to take this moment to offer heart felt congratulations on your full battery. People taking screen shots never seem to have much power.
I fixed it. Apparently the update switched the settings in my brave browser. But hey, It was 0345 in the morning so had just woke up and took it off the charger. I guess GAW now knows how important it is in my life since it is the first thing I check everyday :-)
It looks like color inversion, but if that setting was on, it would affect the whole phone. Puzzling! Have you tried clearing cookies/cache? Hope you get it worked out.
Also, three cheers for dark mode. I like it because it's easier on my eyes.

I use Opera. No changes. Day is white. Night is black.
Probably a problem with your browser. Find your browser day and night modes
Yep - that was it. The update changed the Brave browser settings.
You probably hit it when it was slow and failed to load the stylesheets. Just refresh
So I turned my phone off and restarted, went to my bookmark and it is dark mode without signing in, but big pink boxes around the main heading titles.
When I signed in, I still get “pretty in pink” 😂🤷♀️
That looks cool, but it’s normal on my end🤷♂️
