Yeah counting stations like in the AZ recount where one person touches the ballot to put them on the wheel and 3 people record the vote and it only passes if all 3 record the same vote!
I also like IRAQ's Purple thumb method for only having one vote per person.
And ALL counting done on site, at the polling place. NOT ONE BALLOT is to be packed up and taken to a "counting center." That's where they do most of the dirty work and that cannot be allowed.

Yeah, I’m thinking 3000. Just every 3thousand people, have a counting station. There’s enough churches alone to host per capita, and a good way to provide small churches with a bit of funds. They already have the staff and organization.

Heck, I have a paper ballot when I go vote, yet I have to put it into some sort of machine so it can tabulate it. I wish the counting of the votes was done by people instead of machines. But, that's what my state wants and has voted upon.

Mail in ballots has flaws but without it I wouldn't have been able to vote to Leave the EU as I was living away from home.
You need to get rid of those machines and have proper signature verification.
I believe in the UK you can be prosecuted for not having a correct electoral register for your address, and this is updated a few months before every election. None of this print 5 ballots to Bob who hasn't lived their for 25 years nonsense.

There is already a legal and secure method for absentee voting. These ballots can be filed at any global embassy
This system would work for you to vote, you just have to plan in advance.
The hassle to do a notarized absentee should be worth it to you if you take your vote seriously.

This doesn't exist in my state/county. Which is surprising since the county leans blue unfortunately.
