For each block they generate a cryptographic hash of that block's data along with the hash from the previous block (the blocks are chained together cryptographically). The whole point of the block chain is not to encrypt all the data in there, it's so you can "most likely" detect when someone has modified something. It's a ledger that "ideally" you can't go back and make changes to. And I say "most likely" and "ideally" because it's believed it's almost impossible to figure out how to modify a block of data such that the cryptographic hash will be the same as it was before the modification.
