I have gone 5 year without red meat and my health has improved dramatically. Anecdotal, but I did my own research and it was a game changer.

If research was consistent a decade out, I would not return to beef but would probably eat bison and venison regularly. Wild game meat is on another level nutritionally

Grass fed beef, that hasn't been marinated in steroids and antibiotics is healthy. A lot of what's in the back of the big chain grocery stores is corn/grain fed, and loaded up on the roids.
Butter made from the milk of grass fed cows isn't bad for us either.
The sugar industry pulled the wool over our eyes for the longest time, making red meat and eggs the big cardio vascular villains, when it's really sugar that inflames the linings of the blood vessels and causes clogging. Excess sugar and carbs also leads to fatty liver, which is the root of a whole host of health problems.
If the entire cereal aisle at every grocery store were removed, that would be a good start to improving the over all physical health of the nation.

Are you able to confirm that it wasn't just caloric count? A large steak, for example, is pretty high in calories, and you may not know how many calories you're really eating, especially with oil or butter added.
Often when we take greater attention to our diets (such as taking the time to cut things out), we start making better choices about what and how much we eat.
That alone could easily have improved all other listed conditions like resting heart rate and inflammation.
