I never liked waterbath canning very much, so I pressure can. I think it's actually much easier because you don't need everything to be boiling hot and you can use meat, beans, fish, potatoes and make real MEALS in a jar! The things I grow in the yard end up in the jars too, of course. You can be very creative with soup & sauces. No noodles & rice allowed, but who cares? They're already shelf stable.

My tip would be: 7 quarts needs 2 gallons of food, and 7 pints needs 1 gallon of food. This is quite a bit more than people feel they'll need for a batch but the jars must be packed to the neck, so plan for it. Meat cooked shrinks down, and beans soaked swell up, so they should be put in jars with their "final" form in mind. Canning is really very fun and satisfying! Best wishes to you!

I remember the raised lettering and that machine, but they still had to phone in the sale for approval if I remember correctly... Maybe it was for purchases over $100 but I recall standing around while it was approved, and being a kid, sometimes I was pretty nervous! I had a small limit, like $500. 😐

I remember the Q days, I remember saying "Wow!" every day in 2018, I remember being taught things I never wanted to know and how shocked it made me at the time. I would NOT want to make these discoveries now, with joe blow at the wheel and every other damn thing we have to manage because of his evil, destructive decisions.

So I'm glad I learned everything via Q drops during the prosperous years of President Trump in the White House, or I might have done something stupid like sell my house. Instead I combed the channels for Patriot info and did my best to stay on top of it. Everything needs to be reviewed now, everything. Because we forget things, important things.

Labor Day is NEXT WEEK, my fondest childhood memories are of Labor Days. The lakes are warm enough to float in until dusk, the nights are cool enough for a friendly campfire. When's the last time you watched the sun set from an inner tube?

Now that I'm older, Labor Day is more for canning, and I'm pretty good at it now.

I just bought a new runner for the floor in front of my kitchen sink. Ironically, it has a very Oriental Rug 'look' but it was made in Turkey!! yuck! but better than China.
