Really press into them like you have no clue what happened over the last 2 years, desperately want to learn, and challenge them on every shred of info they try to throw your way as if you can't believe what they are saying is actually going on.
Dispel all presumptions and let them spout their nonsense wholesale like you are a pile of clay which they can shape. Then turn every argument against them with logic and reason, which are depressingly aplenty in light of this clown world, coming from a place completely absent of political bias on the subject.

Edit: By the way, what is happening in this scenario is called "shifting the burden of proof." Ok, one person doing this won't fool anyone. However, get about 100 friends in on it. And all of you , individually go to the same stores (at different times) and start doing this. The first person won't fool anyone. The second person might catch them a bit off guard and they may start wondering if they are on some hidden camera show. By the time the 50th person to walk in the store that day insists to them they don't know what the hell they are talking about, then you'll start to make them question reality.

Went to Menards today. They had a sign that you had to wear a mask if you weren't vaccinated. The greeter looking dude looked at me, then the sign. I said hell yeah I'm vaccinated, got em all about 40 years ago. MMR baby. I asked if there was a measles outbreak or something? He said, no it's for COVID-19. I said never heard of her, and kept on walking.
