The short answer is no. Corporations must follow the laws of the land. They are limited to the policies they can make. Any policy outside the scope of the law is a violation of the law. Most states have exemptions for religious beliefs and philosophical beliefs. All States have medical condition exemptions. Look at this site to find out your State's exemptions.

I have seen some articles about some Texas Roadhouse locations having a Hep A Vaccine requirement. One in Kentucky mandated all employees to get it after there was a breakout of it.

You can get an exemption if you tell them you’re vegan (it’s considered a religious exemption). Also, if you don’t work directly with people, it wouldn’t be considered necessary for the type of business so they wouldn’t have any legal standing.

HIPAA prevents healthcare professionals from sharing your healthcare information outside of a need to know Basis in entities covered by HIPAA.
Unfortunately, your employer could demand your papers or face discipline/termination. I’m currently trying to find ways around it myself.

Public schools can mandate but that will force parents to home school or use private schools instead.
The other problem is if you live in an “at will” state or whatever. Some states employers can terminate employees without giving a reason.
