Yes, I understand what you are saying but all the people who think the process is binary just ignore the cases where that is not true. So they really cannot define what a woman is even though they think they can. They can just define most women and most men.
Even at the chromosome level there are several possibilities. XXY, XYY, XXX, XXXX,XXXY, XXXXY, XXXXX and even just X are all possibilities and people with XX can look entirely male while people with XY can look completely female.
Then we have other ways anomalies can arise because we all start out the same - not binary at all. What happens is that different processes happen at different times (e.g. presence of hormones) that control how things work out. If those hormones do not arrive at the correct time and not in the correct amount then development is not as expected.
What if you were a male-looking XX and you felt that a female body would better suit you. Would you be in favour of an operation?
In short, I feel there are people who might want to change their bodies. I can't say whether that is right or not. I tend to be a fatalist over most things so it would not be for me.
The real scandal is teachers and parents who try to change the genders of their children just because they can and it is trendy. That is just sick - and just attention seeking - IMHO.
