A Grain of Rice by Helena Clare Pitman- it's a kids' book that teaches compound interest. It opened my eyes. Sonlight is a homeschool company that curates great books by grade. Mere Christianity by C.S. Lewis is a must for the deep thinker, but I loved his book The Great Divorce because of the vivid depictions. There are a lot more... I'll come back.
If they are high school or below I recommend the Little House on the Prairie book collection...I read them as an adult and we read through the series when I homeschooled my kids. They are thoroughly delightful!. For female adults the Jan Karon series (Mitford series) are so heartwarming...unbelievably good...you get so hooked on the delightful characters.
Grandmother Winter, by Lynn Garlick, Taos artist...a beautifully crafted story about the animals, winter solstice, presented as for kids, but adults enjoy as well...the animals bring the reader right into the story...have given several away as church gifts, etc...
Any and all books by Terry Pratchett, but "Hogfather" is of a holiday bent and will make you shoot beverages out of your nose. Best opened before Christmas

One Nation Under Blackmail. Volumes 1 & 2. (Volume 1 is in reprint). Whitney Webb is the outstanding author. For adults and very precocious truth-seeking youth. A wonderful history, dense, of the fall of the western countries. Includes a lot about Epstein, CIA, etc, etc, etc.
