Just a place for general discussion. A place to unload whats on your mind and talk about anything - personal, health, help needed, achievements, daily highs and daily lows, theories, predictions and what have you.

Been making pizza all night & listening to music that stirs my soul. So glad to have been taught by my mother how to bake properly, experiment & push myself with my kitchen skills as a young man.

The key to the recipe I use is to weigh your flours (use two types) & water. Then letting it sit overnight in the fridge for a great taste & shop quality texture (really allow that gluten & yeast to work).
I end up using Roberta's Crust recipe & have dabbled with a few different oils. Occasionally I will drop in warm milk instead of water. Any sweet pizza can be enhanced with a coconut oil instead of extra virgin olive IMO (ie BBQ, Hawaiian, dessert varieties).
It all depends on the end flavor you are looking for.
I also make my own dough, single pizza at a time. Flour, water, yeast and salt. Worked at a pizza place during high school and can never get enough.
I'm going to try leaving it in fridge next time. Thanks for the tip!
You are very welcome. The best temp to mold that dough is about 80°F warm the room up & let the cold dough sit for 30-45 min before shaping.
You are making me hungry. Forgive my joke, I never pass up an opportunity. A while back I ran into a chap while dog walking. He was short, overweight, had a slight squint and a gammy leg, but when he told me he cured his own bacon I did what any sensible girl would - immediately asked if he was married. :)
