No rooster just In case we need more babies. Once hens get to be about 3 years old they lay less. If shtf we can have new birds. And if not as long as he stays nice and doesn’t attack me he can stay. A light Brahma rooster and he is beautiful .
I saw a lady online cracking 2 eggs( or whatever amount you want) in a ziplock bag and freezing a bunch of these bags. She stored in pairs bc it was an easy amount to thaw and the amount she eats everyday. Once you thaw, I think you might have to use them right away.

I used to freeze them in large ice cube trays then put them in a freezer bag.

Either works. I bug on freezer burn so I seal them with a little press n seal in the ice trays. Then into a freezer bag once they have frozen.

I heard you can paint them with mineral oil and they last for a year.
I pickle them in borscht and vinegar with garlic, onions, and peppers. They last months.
