I am a mediocre guitarist and fairly ambidextrous but I couldn’t switch hands yet alone find a guitar like that that looks the same. Only explanation I have at this point is wag the dog? What the hell is going on?

Exactly. You can see it in the more recent (8 months ago) easily at 1:10. The last letters of the guitar name Gretsch "CH" are mirror imaged.

Are you trying to say that when the image is flipped, that from the perspective of the guitarist right and left handedness can be misinterpreted?

but from the perspective of the guitarist. how does the handedness of what is plucking the strings change because of this? i spent some time with my teenage son trying to reproduce with our guitars and selfie/normal camera modes but cannot figure out how one can make a guitarist switch hands like this.

Actually that one was uploaded one year ago. The other one was 8 months ago.
It's just the video that's reversed. He's playing a Gretsch Resonator and if you watch the "left hand" video at 1:10 you can see the last letters "CH" of the word Gretsch are upside down (mirror image). Now if he played right-handed a year ago and then switched to left-handed 8 months ago he would surely have had to restring the guitar, then restring it again (back to right-hand) for his newer recent songs and his live performances. None of that makes any sense.
