Yes, humans can (and should) consume food grade DE.
It is also an absolute winner at killing insects. The crystals get between their moving parts’ armor and rip the insects apart. Ants, roaches, etc.

I put a 1/4th teaspoon in my water bottle from time to time to drink through out the day.
