People with dementia lose most of their smell. Smell is a big part of flavor (about 80%). If you lose the aroma of food, most of taste will be the primary taste buds - sweet, sour, salt and bitter. Only sweet is pleasurable, and add that to a lack of inhibition - hence the preference for ice cream and other sweet stuff.

Ice cream causes a powerful addiction. If it's in my fridge, I think about it and I can't control myself.
