You are correct. I think a lot of people nowadays use the term processed synonymously with Ultra-processed:
Unprocessed is raw ingredients with nothing done to them aside from cutting them, or discarding unedible parts. So like raw meat, fish, vegetables, fruit, nuts, berries.
Processed is anything cooked, canned, frozen, cured, smoked, dehydrated, added ingredients, flavorings, or colorings. Which this includes cheese.
Ultra-processed Stuff made from multiple ingredients and additives, like sugar, seed oils, gluten, maltodextrin, sugar alcohols, high fructose corn syrup. This would include something like cheez wiz.
Like bread is processed, but US bread is ultra processed, since the wheat in our flour is dried out with glyphosate, bleached, fortified, bromated, and the rest of the bread often has added seed oils, high fructose corn syrup and other preservatives. Ultra-processed foods are the worst for you, and is the root cause of a lot of chronic disease. I think that is what most people are actually referring to when using the term processed, but it's really just semantics.
Same. I bake my own bread once or twice/week. Eat real butter, drink whole milk, and use lard in some recipes, we also eat eggs and bacon about four times a week.

There was a thread recently (1-2 months ago) that pointed out that pasteurization killed a much needed (healthy) protein. Then there is the A1(Holstein cows) vs A2(Jersey cows) milk to consider, whereby A2 is MUCH health, especially if it is unpasturized. Unfortunately the A2 cows do not produce as much milk, so our food suppliers have transitioned to producing more food that is less nutritional (or even unhealty) in greater quantities (as in GMO crops). Given that Ba Al is now raining on the earth hindering healthier heirloom seed cultivation, one can wonder....
We eat lots of butter, cheese, milk and eggs. So far so good, but I have at least 3 relatives from the early 20th century who died in their early 40's of heart disease, before food was fake.
