To be perfectly clear, there are many Philosopher's Stones. It comes in many shapes, forms, sizes, and names.
But they are all the same Substance. Con-substantial.
Consubstantial - of one and the same substance, essence, or nature, especially the three divine persons of the Christian Trinity.
In other words, they are literally trying to extract "divinity" from children, because we are all Philosopher's Stones and Children are the most pure on account of their near-infinite potentiality.
They cannot succeed because only those who are Creators, who follow the Life of the Creator, and who Understand the Life of Jesus are able to make the Stone.
Evil cannot Create.
Jesus' Life is the Recipe, Ingredients, and Intent of the Philosopher's Stone. Only a complete understanding of His life can lead to Enlightenment.

Even the Last Supper is an emulation of the process to create the Stone. Or, more accurately, the process to create the Stone is an emulation of the memory of the Last Supper.
You take Balanced Earth(Bread/Flesh) and Balanced Moisture(Wine/Blood) that you take from the Bounty of God, separate them, and then combine them in a Vessel(our bodies, Communion).

English translations don’t capture the depth of the statement. The Greek words for Peter’s name rock and the second use of rock are different. The second is petras which can be thought of as “bedrock”. Commentaries spend a lot of time discussing this verse because there is a lot to unpack.

When we rear an animal or plant, we give it water, food, but most importantly, we give it our Love.
That Love we give it is not only ours, but it is Love given to us by God. God is Love, and when we share Love we are spreading the Will of God to all of His Creation.

A Perfect Mineral Stone, in the case of Nicholas Flamel, is the peak of all Material objects -- it is capable of attuning itself to any and all chemical imbalances and take the "burdens" from them, and then can be replenished by literally giving it Love. It is a literal Love Battery. The True Panacea.

I'm aware there are multiple paths to achieve the stone within this mortal life, but I wasn't aware this was one of them.
I also know that you cannot come unto the stone except through God.
I've studied alchemy for over 20 years, and have a fairly decent idea of what it involves (the method I'm aware of at least - the wet path) and it has nothing to do with the blood of children.
The other that I'm aware of, the dry path, is unknown to me at this time, but nothing I've studied indicates that this involves the blood of innocents either.
There are traps for the unwary when studying alchemy, and I passed through the first two and ended up with Jesus - no need for the 'material' version for me - although I might actually give it a go once I retire just for fun.
I have no interest in material wealth, nor immortality - except in the hereafter.
I find it quite funny that from all the various texts and woodcuts that I've studied, I eventually stumbled across what I believe to be the answer in a small coffee table type book about 4 inches square that mentioned something almost in passing.
Without all my other knowledge I wouldn't have known its significance, but without it I would still be struggling to understand the most basic aspect.
Child's blood is a shortcut to attain the precursor. You must charge the precursor with Love to attain a Perfect Living Stone. Since they can not do this, they reject outright that there is a level above the precursor, which is to say they reject Jesus, the Perfect Son of God.
A man who is comfortable with his mortal life, does not fear death, and cherishes only the Love of God, in truth, has no need for the Stone.
Only those who would would abuse the Stone will seek it.
Only those who have no need of it can create it.
Such is the Beautiful Irony of God's Law.
