Agreed. They operate so closely it's not that big of a leap from Mac to Linux. I think the problem with Linux is that some of them are in full nerd mode and they act like their branch is better. With Mac, being a closed system, there are very few problems you'll encounter that someone else hasn't faced making it easy to troubleshoot.
Apple just got busted for not deleting information after a beta test of a software update for iPhones revealed that pictures users deleted were back on their phones. Which casts the rest of their products including Macs as being under suspicion.
So I’d probably knock it down to just Linux.
And apple is a big slave labor fan. So there's that foxconn problem too.

Personally, I am convinced that anything you do online can be seen if you have people/machines looking hard enough. Will some options shield you from some things or make it harder for casual investigation?

Maybe the most seemingly security minded company is actually just "them" inviting you into focusing on you more.
If you really, really want to be safe ultimately, we are probably looking at wearing some type of face hiding accessory, not bought online or with a card, coupled with choosing some coffee shop/public wifi spot without cameras, that you make your way to by not driving to, and making your way through heavily populated preferably underground areas where you use a bathroom to change your outfit/disguise, and then use a computer/burner phone with no connection to you that you use for nothing else (while not carrying your daily phone.)
Even then, make just one mistake and they see you.
A lot of work, right?
It can, and Linux will do even less to protect you from that than Windows.
However, there is an implicit consent to it happening with how ToSes are structured, so the best thing to do is revoking your consent by going away from Windows.
Ubuntu Mate is also pretty good.
Closed source OS's (Apple) should not be used and trusted.
MxLinux with KDE desktop running on an encrypted disk is a good start.

You have native: Thor, Mullvad, Free-office , Masterpdfcreator, LibreWolf, GIMP, INKSCAPE, AEGIS, Kdenlive, Signal, Betterbird for your email, dia for diamgrams, and if you need, you can add Kexi and SQlite for databases.
Of course, at your disposal are all the other packages that make life interesting.
And if you go the linux route, it may very well be you'll find all the other ways to give a big fuck you to big tech.
Fun part? MXlinux has an ANTIX core around Debian. Antix is derived from antifa .... yes .... Sometimes, like Pepe, we need to appropriate the good stuff.
So, if you are still on Windooooooozzzzzzz, wake up, smell the coffee and get into gear.
Install Rufus. download the live-cd iso and burn it to the USB. Restart your computer/ laptop ( check secure boot). At the very least you can check it out. You' ll find in most cases it will run out of the box, and even can give your old box a new life, as Linux basically is low in resources. So, instead of KDE I would then recommend the fluxbox or XFCE desktop.
And of course, from this point on, you can simply install it, and add all the goodies from the packagemanager.
Even better: learn to use the command line. sudo is boss.
It would be good to safe that linux iso or make a snapshot with persistence. It would make your setup totally portable in your pocket if burned to a < 20G USB
If you like the Mac interface but still want to make the move to Linux, Elementary is a decent option. I put it on an old system and it worked great. Well worth giving it a try. They do charge to download the ISO but you can click on Custom Amount and enter $1.
