That sucks you sound like you have a gluten sensitivity. My niece is allergic to peanuts and wheat grain. It's awful when Americans can't partake from the bread basket and one of the oldest American snacks at the ballgame. I wonder if maybe you will outgrow it one day and get your health back. I'm praying for you.
I have a nice bread machine and make some really good HEALTHY breads. I also use it to make my pretzel dough and make my own really good soft pretzels not to mention my own pizza dough that I freeze.
I also have a bread machine. Using the dough setting, the machine does most of the work, and all I do is let it do a final rise, then bake. The only downside is that it doesn't stay fresh very long, but that's because it doesn't have bunch of chemical crap in it. Have been wanting to try the soft pretzels, thanks for the reminder.
I put my bread in a plastic bread saver and it stays good for like 5 days until I have to toss it to the birds. But yes, zero stableizers or preservatives like bread should be.
I would strongly suggest, if you insist on making and eating your own bread, that you don't stop at organic flour.
Some may not know this, but the "organic" label applies only to the method of planting, fertilizing, and growing the produce. What you do to it after it is harvested is open. You can spray it with preservatives, irradiate it; anything (legal) goes.
If you want the best, safest results possible, get your flour from European sources. We get flour from our local Italian deli. It's worth the extra expense. I can go to Italy, buy bread from any vendor, and eat it till the cows come home with no negative effects. In fact, I have a chubby friend who even LOST weight doing that.
Europe may be a sh*thole in many respects, but they STILL do not permit a lot of the crap that goes into North American crops.
I wonder if this has something to do with regulations. Cuz we don't fuck with that in America. We're busy trading our health so corpos and the owner class can thrive. Down with regulation!!
1 ½ cups of Einkorn wholewheat flour
1 ½ cups of spelt flour
½ cup of barley flour
¼ cup of millet
¼ cup of lentils
2 Tsb of dried kidney beans
2 Tsb of chick peas
2 Tsb of raw honey
2 Tsb yeast
¼ cup of extra virgin olive oil
1 ½ cups of warm water
Sea Salt
Grind dry ingredients in a blender and mix together in a bowl.
In another bowl mix the water, honey and yeast and leave in a warm place for 10 min.
When risen mix the wet ingredients into the dry, knead well for 10 minutes and form into the shape you want.
Place on baking sheet for an hour in a warm place and then bake in an oven for 45 – 50 mins at 350 F.
Thats some seriously tasty bread! I ground all that stuff dry then threw some in my little 1lb zojirushi. Used 2.5c flour and 1c water, added 1TB acv and let it sit 24hrs to unlock the nutrients and soften. Also added gluten. Some garden herbs. Came out rich complex taste and great texture. Winner!
The organic flour is the main thing.. in fact research is indicating that the supposed wheat flour sensitivities is to glyphosate on the growing wheat, not to wheat itself.
And sourdough bread, it is better for you.
I started making my own bread as a result of waking up to discover all of the garbage being put into our foods. Once I started this, my husband and I both noticed we began to feel better. I all organic ingredients and I bake bread (2 loaves at a time) around the first of the month and then around the 15th.
Like look, I agree most shit you buy from stores is absolute garbage and tantamount to poison... But you got a loaf where a pallet broke into the mix or something, those wood chips are like playground wood chips, I can guarantee that every single loaf they produce doesn't have giant sharp long wood chips in them, that's retarded. You'd hear about people breaking teeth and choking weekly and the brand would be out of business.
Should there be a regulatory system and regulatiins that protect consumers even if that unfortunately cuts into profits of millionaires owners and billionaire conglomerates?

I grew up in a family that made amazing bread. My Dad was/is a Wizard with making bread and burgers. His scrambled eggs are legendary.
