There's diorite, the stele of Hammurabi predates the Romans by a thousand years so it's very tough, but very hard to work. Marble is relatively soft and easy to carve. That softness might contribute to the paint coming off. They used to paint buildings too, like the Parthenon.

Fun Fact: They were indeed originally painted but paint can't usually last thousands of years. Some sculptures do actually still contain traces of their original paintjobs. You can find images of repainted roman sculptures.

Yeah, there were a few that survived buried in mud that had paint, they're very lifelike colors and bright, it's pretty cool.

I'm not sure really... I remember reading an article where they did a microscopic look at statues to recreate what they would have looked like.

That aside, many of those old statues were likely painted and some traces of the paint that wore off many centuries ago can still be detected.
