if you are careful who knows your address, you are quite anonymous. You are never really anonymous, as the 3 letter agencies will discover any slipup you make. Question is, will EU go to that length!
There's no question they will go to whatever lengths they need to. If you buy BTC (or any crypto) from an exchange that requires an ID to set up your account, every single withdrawal and transaction you make from there is easily traced to you. To be truly anonymous on transparent coins today is next to impossible. You'd have to mine it directly or get it from someone who mined it, or knows what they are doing and how to mix their coins.
Governments don't investigate blockchain transactions, they outsource the task to blockchain analysis companies. In many cases their results are not definitive, but based on probability. They will report that a given transaction is 85% likely to be Suspect A, and that is enough to convict if they know the transaction was for drugs or something like that.
Simply buying BTC is not investing, it's gambling. Real investment is learning about the technology and how to use it to protect your wealth from government acts of aggression like this.
But to your point, the real battle is over privacy. Bitcoin is a transparent ledger where everyone can see everything. It's good for accountability but who wants their private business all out there for the whole world to see? The answer is privacy coins like Monero. Using Monero, only the sender and receiver can see transaction details, and it can't be traced.

You're correct and in the video he explains how you can work around it. This video caught my eye because I actually just set up a TPM on my computer the other day, but I use Linux so this Microsoft BS is not an issue for me. I specifically bought a TPM module for my desktop and use it to automatically decrypt my hard drive on boot. If someone physically removed the drive and tried to open it on another computer or modify the firmware or bootloader it would not work.
