The whole point is the element of surprise. When your gun is behind you, and the assailant comes up from behind, they have the element of surprise. It’s not like it’s hidden, it’s right there for the grabbing. If it’s locked in, then they themselves couldn’t retrieve their own firearm. Every lesson and trainer I’ve seen or talked to carry appendix. Not only it is under cover, in a bear hug you can still grab it. You have the advantage. And in a situation where every second counts, you need every chance you can get.

Guns get forcibly used against legal open carry users all the time. It literally happens to police officers who have retention training and special 3 point retention holsters.. Cops make it hard for criminals to take their guns from them, but it still happens.
