She’s on top of things, specifically mentioned the depopulation because of bird flu and how Biden administration knew of this problem and didn't address, talked about ways to help farmers repopulate their flocks quickly. Takes about 5 months from hatch to laying eggs. I have almost 4 month old hens just now starting to lay their first eggs.
Stop the chicken killing, like yesterday.
Widen the 'preferred breeds' category, so that there is less genetic homogeneity in the national flock. Inlude possibilities for quail (very fast), ducks and geese (longer term, but bigger eggs) etc.
Set up more logistics hubs, with pulp carboard egg-tray printing etc. so that the industry can de-centralize into smaller operators.
Loosen size- and branding-regulations so that small operators can come to the party, quickly.
I started buying my eggs from a local 2 years ago that I found on craigslist that delivers at $5 a dozen. She has standard layers, what she calls tiny layers and quail. So I get a variety, and they are great eggs.
I still think it's mostly hoax like covid, they test you with an infected swab & boom you have it & they add you to the list. jmo
I don't understand how loosening the size and branding regulations would help the small operators get to the (market) quicker. Wouldn't it take exactly the same time for AA or Jumbo eggs to reach the public? I feel there is a component I am missing here.
Side note: I can tell you using a different size egg than is called for in a recipe will play merry hell with your baking.

I understand what you are saying, but loosening up the sizing, or allowing for more variety, will help with supply. If one is not following a recipe then having more little eggs, or less big eggs is just fine. As for recipes - maybe measure broken eggs in a cup, by volume?
The reason I say they will get to market quicker is decentralization - something about how far the eggs have to travel from farm to table. Lots of smaller operations and farms can help this way.

Baking is the unforgiving wench of culinary arts. Use cake flour instead of all-purpose flour? Disaster. Jump into one of the macaon baking boards. It is very precise or failure.
Combining egg sizes to facilitate transportation doesn't yet foster understanding. S, M & L - we need more precision and we have it.
OK, so make more decentralised hubs, is my point. Sort the egsses as you want them. just don't expect to do it in huge factories. Design an egg sorting card and distribute the card via 3-d printing. Color-code the trays.

I only have 6 hens and they're easy to take care of. If you ever have the opportunity to get fresh eggs do it, they taste so much better.

The wife and I went into Sam's today to get some eggs. There were no eggs. We had heard the same from our SIL in another state.
We also wanted a steak to celebrate making it through our latest fast. The steak prices were off the chart. Even damned hamburger was high.
They are hell bent on starving the American people to the point most folks can't eat anything but their poisoned cheap shit.

I remember my father in law telling stories about living during the Great Depression. He said almost everyone in his hometown kept a small flock of backyard chickens. And, his family almost never bought eggs at a store.
This problem is exacerbated by factory farming practices. It’s not hard to understand that putting 10,000 to 50,000 chickens in one building creates significant risks if even just a few become ill.
Just look around at the wild birds, does anyone see thousands of dead ones just lying on the ground? I don’t, and there are literally thousands of wild birds living in the wooded area around my house, particularly starlings.
It seems to me one simple and effective step would be for the USDA to encourage and somehow underwrite reviving the widespread practice of keeping backyard chickens. Between 4 to 6 chickens would provide a dozen eggs a week, maybe more. It might sound crazy, but we would all be better off growing and raising some portion of our annual food needs.
Yea that would be great. But think of all the HOA violations you'd get when all the HOA Karens find out you have chicken in your mexican-illegal-manicured back yard (which also has 4 pebbles instead of 3!)
That’s why I stay away from any neighborhood with an HOA. The small city where I live allows people to keep up to 6 chickens.

Just so you know, this is a six-month problem at best. That's about how long it takes to raise a day-old chick to laying age. Then add in time to gather enough fertilized eggs to fill an incubator, plus 20-25 days to hatch. Every household should get 3-6 day-old chicks at the feed store this spring and raise a small backyard flock. Food security...
