Yes, the hydrogenated oils were made from seed oils and became Trans-fats, one of the worst thing a person could consume. Crisco shortening is a perfect example. Made from cotton seed oil and then hydrogenated to be solid at room temperature.
Siete brand has 3 ingredients. Potatoes, avocado oil and sea salt. Pepsi recently purchased the Siete brand I hope they keep it the same. Don't like all the vegetable oils in the Lays brand. But still an improvement without all the additives.

Go for a ride around Mediterranean countries and check out how much olive oil they have eaten for centuries and it doesn't seem to hurt them.
Ukraine is the world's largest producer of sunflower oil and in the early days of the SMO potato chips (or potato crisps as we call them) vanished from supermarket shelves. You just could not get them. Manufacturers eventually switched from sunflower oil to rapeseed oil and the decline in taste was noticeable, in fact I just stopped eating them. Type of oil is crucial to the taste.

I make my own potato chips now. Slice a baking potato very thin, put in an oven or air fryer. Nothing but potato, and the taste is way better.

Olive oil is not a seed oil and if pure very healthy. Seed oils are high in omega 6 and prone to oxidation. Therefore they are inflammatory.
