If they can see it, then it wasn't truly wiped so they probably just did a basic delete (i.e. the list that the computer uses is changed to say nothing is there, but the data isn't actually changed). When the computer goes to create new data, it can then overwrite that data (which it "thinks" is empty). This could randomly occur as they use the computer.
Had they deleted them months ago, there is a good chance it might be partially overwritten. However they "deleted" them right before handing it over, so it is highly likely that nothing was overwritten and its fully recoverable.

I'm in a neighboring state. I filled up both cars on Saturday and one gas canister (and haven't really been driving much). At the very least we'll have gas price increases. At the worst (and more likely) we'll have outages especially as this will likely go on for a while.

I can relate. I'm still on speaking terms with my parents, but, especially my dad who has stage five TDS, it's hard. Even still, many employers will still offer severance to avoid the hassle or reputational harm of a lawsuit. It's far easier to pay severance. However, the ideal scenario (for the employer) is for the employee to just quit outright.
Usually severance (which is usually offered with the agreement not to sue). There is also a medical cobra requirement i think and potentially some local jurisdiction rules (e.g. I think California has a bunch of employee protection laws).
