a) they risk getting blown up by their own forces (which are way less trained and organized than the Russians)
b) that would be a war crime under the Geneva convention, because they would be disguising themselves as enemy combatants.
It's to reduce chance of friendly fire. Ukraine and Russia have largely the same equipment, inherited from the Soviet Union, so it's not easy to tell them apart at a glance.
