Something that I think a lot of people forget to stock up on is fat. Get some olive oil, save your bacon grease, buy some butter when it's on sale, get a couple small tubs of lard or tallow... any or all of those will be good to have on hand. I have a small stockpile of a couple of those items.

Did they have "timing marks" on the ballot, do you know? If so, it's possible to run them through a tabulator machine... Not to mention, if it's a "mock election" you'd think they'd discuss things like how to research a candidate, hand out a voter's pamphlet for them to look at, etc. Springing it on them like that seems pretty sus to me.
