Can someone explain to me why is it so hard to adapt to so called "Western Values"?
Most of them are rooted in natural law and common sense. The 10 commandments is a good start.

The political elite don’t want these immigrants to assimilate. It’s being done on purpose.
Because most of the world - and virtually 100% of the eastern world - is ruled by psychopaths and always has been.
Psychopaths have no empathy for anyone or anything. Neither do reptiles. That's why psychopaths are so often called "cold-blooded" or "snakes".
No empathy = no conscience. When you have no conscience, you care about nothing but power and control. Other humans, and animals, are just things for you to use - nothing more.
Psychopaths firmly believe in the "laws of nature" that says The Strong Rule Over the Weak and Might Makes Right, and that's exactly how all of them live. Pharaohs, kings, chiefs, mafia bosses - it's always the same thing, no matter where and when they exist.
Even the small-time psychopaths, like street thieves and criminals, live the same way and make life hell for their families and neighbors unless and until they are forcibly stopped.
The western world was aided by the rise of Christianity, because its rules and guidelines mostly consist of "how not to be a psychopath and how to deal with the ones you find." The west actually did experiment with free and fair societies - the USA was the most recent example - but psychopaths despise that and always work to overturn it as fast as they can.
Which is what we're seeing now.

Man is inherently sinful and wicked. It is only through Jesus Christ that we can turn away from sin and pursue righteousness. Even still, Christians are unable to avoid sin entirely until they go to heaven.
Western values are Christian values. As the population of real Christians decreases, so do western values.
Satan is the master deceiver... defying logic, common sense and rational thinking. His goal is to destroy every human being and keep people from learning the Truth about Salvation through Jesus Christ. Everything is a distraction from that.

Islam has a problem with that. Socialists have a problem with that. Commies have a problem with that. Jews have a problem with that.
What connects the dots?
You can see it clearly when you live in communities of recent immigrants: they grew up in corrupt systems and they simply expect corruption at all levels: bribery, influence-peddling, pulling strings, lying on forms, they think "everybody does it." Even when many of the immigrants are honest and good, their expectation that others are not keeps them quiet and allows the dishonesty of the others to thrive. It skews society so that those who play by the rules are increasingly at a disadvantage.
It's not hard to be honest and make the switch in their minds, but a combination of convenience, cultivated habit and fear makes it hard to execute. My 2 cents on it.

That's what I don't get sometimes. Sometimes when I hear people say "Western Values".
They make it sound like it's some complicated special sauce that only a few people can do.
It's actually pretty simple as you said. Follow the Golden Rule and 10 Commandments.
That's all you have to do. This is basic and doesn't require any special skill to follow.
Because when you adopt the western value system there leaves no room to behave like a spoiled child. Start throwing a tantrum and you get just rewards. That's too hard for knuckleheads to understand. To conservatives it's merely common sense.
Western values are Christian values. If you are not a Christian, you may have very different values. That is why we always reference Judeo-Christian values.
"Judeo-Christian" is a psyop created by jews to make it seem as if Christians and jews are aligned, so they can take advantage of our system and infiltrate to their benefit. It couldn't be further from the truth. Jews spit on Christians in Jerusalem.

It is very difficult for them to adapt because they do not eat pork and we do.
