In 2020 I got rid of two 50gal gas water heaters and replaced with a navien tankless (recirc on timer). I also replaced two burnham cast iron furnaces with a lochinvar wall mount. I also installed a Lopi Liberty that I winter burn 24x7. Excel Gas and electric bill is now higher than 2020.
I'm not sure what point you're trying to get across. I guarantee that one tankless would use less energy than two 50-gallon water heaters but not sure what all the other things you mention have to do with this discussion. As far as your gas and electric bills - mine are higher than in 2020 as well and I have not changed a single appliance during that time - the reason? My gas and electric rates have gone up because of all the "Green energy" regulations implemented under Biden and my loony lefty state government.

Eh, you'd need a pretty large turbine and large water flow to get decent power. I've seen tons of "off grid" water wheel / dams / turbines / river inventions to make power, and none of them can do much more than power one fridge.

Hot water heaters spread demand over the day with small peaks. Electric Tankless don't work very well or quickly, and they have huge peaks during high demand times, which are fairly uniform (between 530-7am people showering to go to work)
Gas makes sense because they work much better/faster and there is no load on the electrical grid.

If you have surplus solar power, and not feeding back to grid, heating that water tank is a good way to store excess energy. Place the gas-based water heater, in series, after the electricity-based water heater, for cloudy days.
