Ingredients: Refined coconut oil, good vinegar, some type milk /dry milk reconstituted, liquid oil, salt.
Because of all the health benefits of coconut oil I have started making 'butter' with it. It just takes a few minutes and the flavor seems the same. Basically you melt some refined coconut oil and add it to some 'milk' curdled with good vinegar and salt. You can adjust the hardness with a little liquid oil so it stays softer in the fridge. There are emulsifying stabilizers that can be included but I don't use them. You have to give it a few strong stirs to keep it from separating as it sets up. My grandfather who was born in 1916 said he drank 'potato milk' (mashed potatoes mixed in water) as a baby. Not sure of the reason, it was either intolerance on his part or an issue with his mom. Potatoes have almost all necessary nutrients in them.

35 years ago I knew a woman of Dutch descent who moved here from South Africa. They had a servant for every task. Who did the laundry only did laundry and so on. Friend contracted to build a home and has been waiting 2 months for the concrete guys who say they can not get. In part because a couple of concrete factories (of components?) have burned down. My friend preordered the materials to build the home as he had a heads up about shortages from the lumber store. Said he got trusses ordered just in time as there are no more metal parts available for them. Also know that appliances are a year out on many brands shipped internationally as a friend works at Lowell's. He ordered a stairway some weeks back and received a shipping notice that it was shipped (inside the US) and thought it should have been delivered a couple weeks ago, still out.
