From the post further back on Sly’s Insta that mentions the book you can look through his daughter Sophia’s Insta. The hand holding the book has similar hands and manicure, imo. Not sure I see a goatee. Sophia posts a lot with her sister Sistine. The mom/wife as well. All to say I think the 3 women behind him are his fam.

I can't find the logo in the hat, but it looks like it was custom made by taking 3 specific ridges from the 007 Spiral (James Bond), mirrored it then flipped a copy, and put a Q in the middle.

The sales brochure for the one-owner used Gulfstream shows interior details which confirm it is exactly the same kind of jet that Stallone is sitting in in the photo.
The 'JS' initials on the leather headrest in the brochure's jet is likely a custom embroidered initial of the previous owner. I suspect that if Stallone owns the jet he's in, his initials would be represented.
QoS is a good answer but I can't find anything that matches for sale or used by the production crew. Even just looking up QoS logo brings up the same one that's plastered on all of the merch with the name spelled out.

The headrest is definitely not the UN logo, because you would see part of the globe within the branches, but instead you see a sharp edge.
Leather head rest has a laurel wreath. Could be just a stitched embellishment with no meaning other than it looks nice.
