Car remote kill switches currently work on LTE/4G/5G, cellular network, which is a cable that generally goes from a device in your dash via a wire snaked through your vehicle, and comes out the antenna to connect to the network. All you need to do is find that LTE/4G/5G coax cable and disconnect it, and then it's useless.
While physically yes, until/unless the onboard system is programmed to disable or lock down the vehicle if the antenna is unplugged or the shutdown feature otherwise becomes disabled. Fairly simple to impliment.

And that type of stuff can be subpoenaed if you're in an accident and I've read where car accident witnesses had their info subpoenaed so their dash cam recordings could be viewed by investigators. And some dash cams record the entire time the car is on, including audio. And they're not just recording what's going on in front of the car. Many of them record what the people in the car are doing. 😕
I lucked out about 10 years ago and had the winning bid for a 1986 Factory LHD HJ60 Land Cruiser from UAE. That's like the Holy Grail of vintage Land Cruisers. And I got it for about 60% of what they typically went for because it was a distress sale and cash only and I was in the right place at the right time. So awesome.
That thing would probably survive an EMP. Mechanical diesel injection, no ECU. Not even power windows. Many, many, many reports of these with literally over a million miles on them still going strong. Mine only has 428k. Most likely because it's not a very comfy daily driver. We use it to take our kids out camping. Got it all kitted out with a RTT and custom built drawer system in the back. I love that goddamn car.

Only way to know is to try.
Even that can be faked out with a 50 ohm resistor and the system won't know the antenna is unplugged.
