They were made of horsehair and plaster. Somewhere I have the centennial issue of the Magazine of the Midlands on the Trans-Mississippi and International Exposition held on Omaha Nebraska in 1898. I should scan it and post it. The building materials were mentioned there.

I use to read this book to my kids.
The 'modern' versions leave out all this stuff...
Moore was a Lancastrian, the red rose was the symbol of the House of Lancaster. The House of York was symbolized by the white rose. Hence the so called War of the Roses. The House of Tudor fought on the Lancastrian side, their symbol is a combination of white and red.
