This directly contradicts the Great Commission in order to fulfill a very particular interpretation of The Revelation of John. One that didn't emerge until the late 19th century.

This part. Israel IS the Church. Heirs of Abraham according to the promise and not by blood. A priestly people according to the Order of Melchizedek, with Christ as eternal High Priest. Not the Order of Aaron.
The first problem with your example is that is implies God changes. He is eternal, and thus changeless.
The Law is given to a specific people for a specific purpose, to prepare the way for Christ. It is not how God treated all of Mankind, just a set way of life for a particular people. Hence a Covenant not some thing bound to time, as God himself is also not temporal. Not that it matters since the Torah was never implemented by the Israelites anyways. It also served to show how political power is not salvific, despite all the utopian systems since then.
Covenants were made with specific people groups, the exceptions being the Adamic and Noahide.
Dispensationalists believe that the Abrahamic and Mosiac Covenants hold, and thus there is a special role for the race called Jews. It is not an accident this belief arises with Darwin and the belief in superior and inferior races.
It would be the greatest tragedy for Dispensationalists if all of Abraham's physical seed converted to Christ. Whereas it is the Father's wish that all men be saved, and the Apostles spent great effort in converting their ethnic brothers.

The specific reason would be dispensationalism. A heresy that blossomed due to private interpretation of scripture, along with the Judaizing tendency. Of course, that is only how it played out in history, we don't have the counterfactual timeline to compare it to.

Generally "high" church Protestant groups will have liturgical services and more formal prayers, so I went with Lutherans as the earliest. But Anglicans, and other churches from the earlier part of the Reformation probably have similar prayers.
For Orthodox we have prayer rules, developed with the guidance of a parish Priest. Eg Morning Prayers plus a given number of Jesus prayers on a prayer rope, plus before/after meals, Evening prayers and so forth. The long term goal is to live a life of prayer with the Jesus prayer always in heart.

As for reading I would stick with the 4 Gospels at the start.
The Gospel of Mark is the most compact and simplest expression of the Good News of Jesus Christ.
Matthew is more directed to a Jewish audience and has more of a focus on Jesus as Messiah and how he fulfilled the prophecies of the Old Testament.
Luke is a more historical account from a Gentile doctor.
John is more theological than the other 3.

I would definitely recommend going to a Church. I can understand the issues with "organized" religion, but Christ established a Church and not a philosophy.

As an example, in Orthodox morning prayers, we recite Psalm 50 (51 in western canons). This Psalm was written by David after being confronted by the Prophet Nathan for his adultery and murder. Yet, David is the type/image of Christ to come. Because he followed the Law faithfully. Which is to say, when confronted with his sins he repented and sought the Lord.

Our church has a tiered Canon, essentially. Highest is the 4 Gospels, then the epistles & letters of the New testament, then the Old testament which is read as a type or shadow of the new covenant. After this comes writings thought to be inspired but were not universally accepted at Nicaea, such as Enoch. Of course fully heretical texts as the various Gnostic texts from 2nd & 3rd century were excluded whole sale.
Luther made his own alterations, from what I know to match the masoretic OT, not realizing this Hebrew version was likely rewritten to remove as many references to Jesus as possible, to prevent conversion of Jews to Christianity. Also to support the Reformation (which ended up a rebellion and founding their own separate church).
