Before they fire you, there are many things you can do to forestall and extend maybe indefinitely that deadline. Get from your employer informed consent. By doing this you are building your legal case against them in case they do the stupid thing and fire you. Line up allies you are not going to submit to this tyranny. Fighting this alone is much harder than when there are more people part of the complaint and lawsuit.
First of all, you do know that EAU is experimental and there is informed consent. Despite the misinformation, the FDA did not approve Pfizer's mRNA vaxxine. They only approved a foreign booster shot. This doesn't apply to you or any other unvaxxed individuals.

Legally, I believe this works against them. For them to put a deadline on this is coercion. No, no, no! There is nothing "mutual" or agreed upon by you. I would absolutely NOT sign anything that states or implies that you mutually agree. If they chose to terminate you then that is 100% their decision and action, and in no way mutually supported by you.
If they try some shit to force you out, ask for a separation letter with “eligibility for rehire.” Ive been told that can help getting unemployment since it shows you did nothing wrong.

I haven't seen anyone mention this yet, but all the tests are EUA, too. In other words, you have the right to accept or refuse the tests -- regardless of the company's policy.
Remind them about OSHA 1970, Section 11(c) that may (iirc) prevent the employer from retaliating against you should you refuse to get "vaccines" or tests to which you have reasonable belief would seriously harm you.
I think someone mentioned this already, but also be sure not to give any kind of consent, written or verbal, to anything regarding "mutual separation".

Some good advice posted here, do nothing, sign nothing, if you're state is a non-consent state, record the conversation. Otherwise indicate you'd like to record the conversation if that's okay. If they have nothing to hide, should be a non-issue.
