We watch the ports, the rail car unloading, transport trucks and movements of military equipment. The US is monitoring cell phones and communications within Iran. The US is gathering information on all international bank accounts controlled by the IRGC and Iranian officials.
We know what they have, where they have it, who controls it, who paid for it... and that information grows by the day.
